Heritage Breed Animals
We only source and use heritage breed animals that are raised as part of the Global Animal Partnership Program (GAP Certified animals) from 2 different family farms. The animals are raised without any added growth hormones or antibiotics being administered. The animals are never confined in gestation crates and are allowed to roam and be free while foraging on a 100% vegetarian diet. We believe that an animal's quality of life is integral to the end product, that everything that they eat and consume throughout their life comes through in the flavor of the meat, and we strive to work with farmers and ranchers who share our beliefs.
Quality Ingredients
We source premium spices and ingredients from Italco Food Products and Savory Spice Company and use all-natural beef and hog casings. We utilize locally made craft wine from Carboy Winery and locally made spirits from Woody Creek Distillery in our recipes as well. All of our products cure naturally with sea salt and celery juice powder or cherry powder. None of our charcuterie and salumi contains added nitrates or nitrites besides those occurring naturally in celery juice powder, cherry powder and sea salt. It's all made as naturally as possible from start to finish.
Handcrafted
Each and every product is handcrafted from start to finish. From hand trimming the pork or beef, to slowly mixing the all-natural spices and locally made craft wine or spirits, to hand tying each piece of salumi, to the slow fermentation that creates maximum depth of flavor, and slowly drying each product to create the perfect unctuous and supple texture and mouth feel before they are hand packaged. It's a truly handcrafted product every step of the way!
Artisanal Products
We're artisan producers, and we're not in a hurry to take any shortcuts when we make our products. The longer it takes, the better it tastes. If a product needs another week or two in our climate-controlled drying rooms, it is worth the wait, we promise!
Rocky Mountain Cured
Our USDA-certified facility is in the small town of Basalt, Colorado, nestled in the mountains of the Roaring Fork Valley between Aspen & Glenwood Springs. We feel that the altitude helps create some magic in our finished products’ quality, as it may mimic the mountains of Italy and Spain. Our products have their own unique “terroir,” and we invite you to give them a try as we are sure that your customers will love them!
